We don’t do a giant menu. We do carnitas — slow-cooked in small batches every day we open, until they’re crispy on the outside and fall-apart tender inside. Then we build everything else on top of that. No shortcuts.
And when we’ve got chicharrones, grab them fast. They don’t last.
